Abertiny Pascuaza is a producer within our sourcing program in Narino, Colombia. This is our first ever purchase from Albertiny Pascuaza - and what a fun way to start off a relationship. This coffee is processed using a rare and tricky method called anaerobic.
Anaerobic, or without oxygen, is a more controlled version of the washed process. To start, the coffee is pulped and then fermented in closed, oxygen-free tanks. As the coffee slowly ferments, the C02 is released through a valve in the tank. This highly controlled method is a more precise version of typical aerobic, open-air fermentation. Anaerobic gives the producer more tools to steer the flavors in a specific direction.
